These garlicky curried potatoes are first cooked in butter and then flavoured with onion, lots of garlic, chili, madras curry and desiccated coconut before cooking further in a light tomatoes sauce. This dish can be enjoyed as an all day meal with a side of fried eggs or omelette, sauteed leafy greens or an easy salad. L❤️ve, Comfort ---------- Salads are delightful to eat and this recipe is one of the simplest to make for both the curious and the connoisseur. Enjoy.
