For my meatless Mondays or when I'm feeling like skipping meat , this Potatoes cauliflower and peas samosa recipe is one of my to go to. But the samosa are so good , you don't have to wait for those days, you can can make them on any day. INGREDIENTS 2Tbs Cooking oil ( I used avocado oil ) 1 Cup ( Medium ) yellow onion, peeled and diced 4 Scallion chopped, reserve greens for finishing 1 Green chili, chopped ( deseeding optional ) 1 Tbs Garlic, chopped 1 Tbs Ginger, minced 2 Cups Frozen peas 1 Tsp Cumin seeds 1 Tbs Coriander 1 Tsp Cumin 1/2 Tsp Chili powder 1 Turmeric 3 Yukon gold potatoes, peeled and cut small dice, steamed 2 Cups Cauliflower, small florets, steamed 1/2 Cilantro, washed, chopped 1 lemon zested and juiced Salt and pepper to taste
