The eggplant leaves have different variants and not all are edible. It is slightly bitter but highly nutritious. Egusi and vegetable soup is a delicious and popular West African dish made with ground egusi (melon seeds) and various leafy greens. This soup is rich, flavorful, and usually paired with a starchy side like fufu, pounded yam, or rice.
